It felt like was time to for a new Mocktail recipe. Our pomegranate trees are loaded right now and I’ve been looking for fun ways to use this yummy fruit. Halloween is just about here, and I’m having a little fun making spooky treats. Any drink that has ginger beer as the main ingredient is a win in my books and with the sweetness of pomegranate it’s perfect for the sweet tooth that Halloween brings.
Pomegranate Potion Mocktail
- Pomegranate Cordial (see recipe below)
- Ginger Beer
- Ice
- Fresh Blackberries + Pomegranate for garnish
- Cocktail picks and plastic teeth
In the bottom on a glass muddle, 3-4 blackberries. Add ice and fill the glass almost to the top with ginger beer. Add 1-2 oz. of the Pomegranate Cordial. Top with a sprinkling of pomegranate seeds and plastic teeth. You can also drizzle I little more of the cordial on top of teeth for a creepier look.
Pomegranate Cordial
- 3-4 pomegranates
- sugar
- 1 tsp. vanilla
- pinch of salt
Remove all the seeds from the pomegranates. Place the seeds in a blender and blend on high. Strain the pomegranate through a strainer lined with cheese cloth to remove all the seeds and pulp. You may want to poor it through the strainer more then once. Measure the amount of juice (you should get about 3 cups). Add the vanilla and salt. You will use a 2:1 ratio for the juice to sugar. So, if you have 3 cups of pomegranate juice, add 1 1/2 cups of sugar.
Bring the mixture to a boil and keep at a rolling boil for 3 mins. Cool completely and store in an airtight jar in the fridge up to 2 weeks.
