California Sunshine Shortbread

These our one of our new favorites.  I love shortbread, it’s quick and easy to make and needs very few ingredients.  And no cookie can compete with it’s tender, butteryness.

I named these cookies California Sunshine for the orange zest that came from our tree and poppy seeds that come from our state flower.






















California Sunshine Shortbread
1 stick butter (room temp.)
1/3 cup powdered sugar
zest of one orange
1 tbsp. poppy seeds
1 cup flour

Cream butter, add zest and poppy seeds.  Add powered sugar and beat well.  Finally add the flour and mix until dough is smooth.

I used a shortbread pan (made by Brown Bag Cookie Art).  Spray the pan lightly with oil.  Press the dough into the pan and then poke it all over with a fork.  If you don’t have a pan, you can just roll out the dough to 1/4 inch, cut out desired shape, and bake on parchment paper.  To remove the cookies from the pan, let it cool 10 mins.  Then slide a knife around the edges of the pan and turn it upside down on a cutting board.  Cut into wedges while it is still warm.

Bake in a 325 F oven for about 30-35 mins if you are baking in a cookie mold or if you cut out individual cookies about 10-12 mins.

Pretty Pink Happy Thoughts

Spring is here!  And I’m ready for the new beginnings that come with this season.  The last couple of months have brought some trying and tough times to for the people I love.  It’s time for some Pretty Pink Happy Thoughts, and I thought these pretty pink Easter dishes would help stir these emotions.  Sometimes to get yourself out of a funk or find some hope, you need some distraction from what’s weighing you down.  Today I did that by playing with my camera and tripod.  While Olivia napped, I played.  And it put me in a good mood.

Is life throwing you some curve balls right now?  Take a couple minutes to do something out of the ordinary, something creative, fun, or inspiring.  Leave the laundry and dinner can wait another 30 mins.  Find what brings your Pretty Pink Happy Thoughts?

Home Tour: The Kitchen

The most used room in the house is our kitchen by far.  This is where I spend the most hours in the day.

Yes, these are oranges from our tree in our backyard.  Gotta love living in Cali.

A couple years ago we renovated the kitchen.  You can read more about our renovation and how my Dad and brother Joash made this happen here.  It had the original 1920’s cabinets, sink, plumbing, and even stove when we bought the house.  When we renovated I knew I wanted to keep the built in table and benches.  So, we took out walls and the kitchen grew into the old laundry room area.  This gave me about 5 times more countertop space and about 10 times more storage.

We installed IKEA cabinets, bought new appliances, laid new bamboo flooring, put in avocado green glass tile, and had quartz countertops installed.  It is the best kitchen ever!  And yes, I do have two sinks.  It is really quite handy.

Vintage Book Page Eggs

You’ve probably seen before that I like vintage book pages.  I’ve made party buntings, even a table runner, and covered little birds with them.  I thought it would be cute to decoupage vintage book pages onto Easter Eggs.  They go quite nicely with my Chalkboard Eggs this year.  I’m kind of going for a neutral palette this year, just a little change from the traditional pastels that usually accompany Easter decor.

I used Mod Podge, paper mache eggs (from Michaels), and a couple vintage books from a thrift store.  I chose 3 different books to use because they had varying shades of cream and tan and I liked the effect that this gave.

I simply covered the egg with Mod Podge, using a paint brush.  Then tore up little pieces of the book pages and layered them on the egg, making sure to put a generous amount of Mod Podge over each layer.  And the great thing is that they will last forever and I can pull them out year after year.

When I put it all together, I think I’ll need to include some burlap.  Maybe in the form of a table runner or a Happy Easter bunting.

Gorgeous Green

We’ll be having Corned Beef and Cabbage again this weekend and after, something sweet and green.

Happy St. Patrick’s Day!  Here’s some green treats to celebrate with.  I made these pinwheel cookies in green and white and flavored them with peppermint extract.  And I got these yummy mint chip meringues and gold chocolate coins at World Market.

And this little green garland was made with green plastic Easter basket grass and some twine.  I love an excuse to decorate with green.

Chicken Fried Rice

This one of the recipes that really has morphed from other recipes over the years.  I’ve been making it this way for at least 12 or more years.  Now I’m not sure where it began, but here’s my take on fried rice.  It’s got some ingredients that you might not be familiar with (like Maggi Seasoning and Chinese Five Spice), but it’s pretty low in fat, quite healthy, and definitely tastey.

Chicken Fried Rice
4 cups of uncooked brown rice
2 eggs
1 chicken breast or 1 pork chop (cubed into small pieces)
5 slices of bacon (cut into 1/2″ pieces)
4 large cloves of garlic (minced)
2 inch piece of ginger (pealed and finely grated)
1 tbsp. veg. oil
2 tbsp. soy sauce
a few splashes of Maggi Seasoning
1/4 – 1/2 tsp. Chinese five spice
4 spring onions (finely chopped)
1/2 of a red pepper (finely chopped)

Cook your brown rice however you wish, I use a rice cooker.  When it is done, lay it out on a cookie sheet and place in the fridge for a couple hours. This dries out the rice and makes for a better finished product.  Often I just make extra rice earlier in the week when I make a curry or something else.

In a wok or deep fry pan, cook the bacon and chicken.  During the last couple of minutes of cooking the meat add the garlic and ginger.  Remove the meat from the pan, and add the veg. oil.  Beat the 2 eggs in a bowl and season them with salt and pepper.  Pour the eggs into the hot pan.  Cook until the eggs are quite set, then flip the eggs over like a pancake and cook the other side.  Remove from the pan and set aside.

Put the meat, garlic and ginger back in the pan and add the rice.  Add the soy sauce, Maggi and Chinese five spice.  Stir the rice, making sure to get to the bottom of the pan.  If the rice is sticking, add a little more veg. oil.  When the rice is heated completely through add the spring onions, red pepper, and the fried egg that has now been sliced into thin strips.  Cook the rice for another 4-5 mins.  We just eat it as a complete meal, no sides necessary.

Rose Bowl Flea Market

How was your weekend?  Mine was pretty great!  Saturday was 80 F and we spent most of the day outside in the yard.  We cleaned up flower beds and hosed off all the outdoor furniture and porches.  Then Sunday I went with my bestest friend, Heidi to the Pasadena Flea Market.  We’ve been wanting to go for a few months now.  It was really great to have a day away from kids and some time to ourselves.

It was a super busy day at the Flea Market, there were a lot of shoppers.  But, there was also a lot of really great stuff.  I took some pictures along the way to share just a few of the things that caught my eye.  I really didn’t buy much, but I did get a great vintage school chair for Dylan’s desk and some really cute vintage wooden fruit baskets.  My friend Heidi, well that’s another story, she found a lot of really fun, random things.

Spring Break in Ireland

I’ve got some really exciting news!  We’re going to Ireland for Spring Break (that’s less then a month away).  I have the most generous parents. They are so generous, they are border line crazy.  They are taking us to The Emerald Isle for a week.  We are staying in B&B’s and even castles – WOW! I am so lucky – Lucky like the Irish! And I’m not just lucky because I get to go to Ireland, I’m lucky because I have great parents.  Parents that love and support me. I truly am blessed to have the family that I have.

I illustrated our little trip tonight. It was a lot of fun to put it together and later it will be a great addition to a shutterfly photo book of our trip. I mapped out where we would be staying each night, but there will be lots of little detours along the way. Don’t you worry, I’ll be sharing a lot of our trip. I hope to blog as I go even!  And I will be taking LOTS of pictures.

Chalkboard Easter Eggs

Why the heck not?  I love chalkboard everything!  I’ve even painted it on rocks.  So, why not eggs?

I painted black chalkboard paint onto paper mache eggs that I bought at the craft store.  I’m sure this could be done on real eggs as well.  But, this way they can be used over and over.  My kids can decorate and re-decorate these eggs as many times as they want leading up to Easter.

The eggs sit in these Paper Nests that I made last year with shredded pages from vintage books.  The black and white are far from traditional Easter colors, but I think they are a fun graphic element.

Irish Soda Bread (with a twist)

This is what I made for dinner, and I thought that it probably should be served with Irish Soda Bread.

I know there are lots of people out there that aren’t huge fans of either currents or raisins.   So, this is my untraditional Irish Soda Bread.  Seeing I have an Irish name (McConnel) and I’m a redhead, then I feel I might be allowed to make these adaptations to a Irish tradition.

My Irish Soda Bread is sweetened with dried cranberries and orange zest.  And for health benefits and texture, I used some whole wheat flour and ground flax seed.

Irish Soda Bread
3 cups unbleached flour
1 cup whole wheat flour
2 tbsp. ground flax seed
1 1/2 tsp. salt
1 tsp. soda
4 tbsp. sugar
the zest of one orange (finely grated)

1/2 cup cold butter cut into 1/2″ cubes or smaller
2 eggs
1 3/4 cups buttermilk

3/4 cup dried cranberries

Combine first 7 ingredients in a bowl.  Using a pastry blender, cut in the cold butter to the flour mixture.

In another bowl, beat the eggs with a fork and add the buttermilk to the eggs.  Pour the buttermilk mixture into the flour and butter.  And stir until just combined.  Add the dried cranberries and kneed into a ball on a well floured surface.  Do not over kneed, just till in comes together well.

Place ball on a parchment lined baking sheet.  Cut an X on the top of the bread with a knife.  Bake for about 45 mins at 375 F.  Bread is done when a toothpick inserted into the it comes out clean.

Serve warm with Orange Honey Butter (see below).

Orange Honey Butter
1/2 cup of butter softened
zest of one orange
1/4 honey

Mix well with an electric mixer.  Roll into a log in plastic wrap.  Then chill it completely.  Slice into coins for serving.
