I’ve been meaning to share this for months. With the start of 2012, I decided to introduce Monthly Memory Verses to Oleander and Palm. The concept is simple, each month I will provide a free download of an memory verse in the form of an art print. You just print it off and and stick it in an 8 x 10 frame. All month long you can read it with your family, by the end of the month hopefully it will be memorized.

I hung our frame in our kitchen, right by the back door. This way we see it as we leave everyday. I purchased my frame at Target for $9.99. It’s a simple white frame with a white matte.

So, it’s just 3 sleeps till we are leaving on a jet plane for Ireland. I shared how we are so blessed to be going to Ireland for Spring Break. Now I’m down to the crunch and have so many things on my to do list. Slowly but surely I’m checking them off.
One thing that we really like to do before we visit a new country, is do a little research. We think the best way to do that is with a guide book. Lonely Planet guide books are our favorite. They seem to be the easiest to read and follow and have a lot of great maps. There are of course other great ones out there, this is just our personal preference. But definitely check the publication date on any guide book you purchase. You don’t want one that is so old that certain restaurants and hotels no longer exist. That won’t be any help to you at all.
If you are the kind of traveller that likes your vacations to be about relaxing by the pool and having time to read a good novel, then you shouldn’t travel with us. We are the kind of travellers that like to pack in as much of the culture, sights, and food as possible. We believe you can rest on the flight or when you get home. In order to get the most out of a country, you need to plan ahead and do research. We like to read through most of the guide book about the spots we are visiting and take a highlighter and mark up things that seem interesting or need farther research. I’ve been doing this in the evenings and eating Hershey Creme de Menthe Kisses. They are so yummy. And luckily they are a seasonal treat for St. Patrick’s Day (the green wrapper), because I could get addicted to these pretty fast.
We have a pretty good selection of Lonely Planets on our book shelf. And they are fun to look through even after your trip and remember some of the sights you saw.
How do you prepare for a trip? Do you research where you are going long before the trip? Are you a “see everything” traveller or are you a “relax as much as possible” traveller?

These our one of our new favorites. I love shortbread, it’s quick and easy to make and needs very few ingredients. And no cookie can compete with it’s tender, butteryness.
I named these cookies California Sunshine for the orange zest that came from our tree and poppy seeds that come from our state flower.


California Sunshine Shortbread
1 stick butter (room temp.)
1/3 cup powdered sugar
zest of one orange
1 tbsp. poppy seeds
1 cup flour
Cream butter, add zest and poppy seeds. Add powered sugar and beat well. Finally add the flour and mix until dough is smooth.
I used a shortbread pan (made by Brown Bag Cookie Art). Spray the pan lightly with oil. Press the dough into the pan and then poke it all over with a fork. If you don’t have a pan, you can just roll out the dough to 1/4 inch, cut out desired shape, and bake on parchment paper. To remove the cookies from the pan, let it cool 10 mins. Then slide a knife around the edges of the pan and turn it upside down on a cutting board. Cut into wedges while it is still warm.
Bake in a 325 F oven for about 30-35 mins if you are baking in a cookie mold or if you cut out individual cookies about 10-12 mins.

Spring is here! And I’m ready for the new beginnings that come with this season. The last couple of months have brought some trying and tough times to for the people I love. It’s time for some Pretty Pink Happy Thoughts, and I thought these pretty pink Easter dishes would help stir these emotions. Sometimes to get yourself out of a funk or find some hope, you need some distraction from what’s weighing you down. Today I did that by playing with my camera and tripod. While Olivia napped, I played. And it put me in a good mood.
Is life throwing you some curve balls right now? Take a couple minutes to do something out of the ordinary, something creative, fun, or inspiring. Leave the laundry and dinner can wait another 30 mins. Find what brings your Pretty Pink Happy Thoughts?

The most used room in the house is our kitchen by far. This is where I spend the most hours in the day.
Yes, these are oranges from our tree in our backyard. Gotta love living in Cali.
A couple years ago we renovated the kitchen. You can read more about our renovation and how my Dad and brother Joash made this happen here. It had the original 1920’s cabinets, sink, plumbing, and even stove when we bought the house. When we renovated I knew I wanted to keep the built in table and benches. So, we took out walls and the kitchen grew into the old laundry room area. This gave me about 5 times more countertop space and about 10 times more storage.
We installed IKEA cabinets, bought new appliances, laid new bamboo flooring, put in avocado green glass tile, and had quartz countertops installed. It is the best kitchen ever! And yes, I do have two sinks. It is really quite handy.

You’ve probably seen before that I like vintage book pages. I’ve made party buntings, even a table runner, and covered little birds with them. I thought it would be cute to decoupage vintage book pages onto Easter Eggs. They go quite nicely with my Chalkboard Eggs this year. I’m kind of going for a neutral palette this year, just a little change from the traditional pastels that usually accompany Easter decor.
I used Mod Podge, paper mache eggs (from Michaels), and a couple vintage books from a thrift store. I chose 3 different books to use because they had varying shades of cream and tan and I liked the effect that this gave.
I simply covered the egg with Mod Podge, using a paint brush. Then tore up little pieces of the book pages and layered them on the egg, making sure to put a generous amount of Mod Podge over each layer. And the great thing is that they will last forever and I can pull them out year after year.
When I put it all together, I think I’ll need to include some burlap. Maybe in the form of a table runner or a Happy Easter bunting.

Happy St. Patrick’s Day! Here’s some green treats to celebrate with. I made these pinwheel cookies in green and white and flavored them with peppermint extract. And I got these yummy mint chip meringues and gold chocolate coins at World Market.
And this little green garland was made with green plastic Easter basket grass and some twine. I love an excuse to decorate with green.

This one of the recipes that really has morphed from other recipes over the years. I’ve been making it this way for at least 12 or more years. Now I’m not sure where it began, but here’s my take on fried rice. It’s got some ingredients that you might not be familiar with (like Maggi Seasoning and Chinese Five Spice), but it’s pretty low in fat, quite healthy, and definitely tastey.
Chicken Fried Rice
4 cups of uncooked brown rice
2 eggs
1 chicken breast or 1 pork chop (cubed into small pieces)
5 slices of bacon (cut into 1/2″ pieces)
4 large cloves of garlic (minced)
2 inch piece of ginger (pealed and finely grated)
1 tbsp. veg. oil
2 tbsp. soy sauce
a few splashes of Maggi Seasoning
1/4 – 1/2 tsp. Chinese five spice
4 spring onions (finely chopped)
1/2 of a red pepper (finely chopped)
Cook your brown rice however you wish, I use a rice cooker. When it is done, lay it out on a cookie sheet and place in the fridge for a couple hours. This dries out the rice and makes for a better finished product. Often I just make extra rice earlier in the week when I make a curry or something else.
In a wok or deep fry pan, cook the bacon and chicken. During the last couple of minutes of cooking the meat add the garlic and ginger. Remove the meat from the pan, and add the veg. oil. Beat the 2 eggs in a bowl and season them with salt and pepper. Pour the eggs into the hot pan. Cook until the eggs are quite set, then flip the eggs over like a pancake and cook the other side. Remove from the pan and set aside.
Put the meat, garlic and ginger back in the pan and add the rice. Add the soy sauce, Maggi and Chinese five spice. Stir the rice, making sure to get to the bottom of the pan. If the rice is sticking, add a little more veg. oil. When the rice is heated completely through add the spring onions, red pepper, and the fried egg that has now been sliced into thin strips. Cook the rice for another 4-5 mins. We just eat it as a complete meal, no sides necessary.
