Grapefruit Jalapeno Lime Mocktail Margaritas and Outdoor Entertaining

We might have a tiny backyard, but it’s green and shady in the afternoons and evenings. As soon the weather warms up, we eat all our meals outside. I love to entertain outside, when you house is small, like ours, our backyard is another big room to hosting guests.

If you are going to have folks over then, fun drinks are a must. My family might agree that this might just be the best mocktail recipe I’ve come up with. Virgin Grapefruit Jalapeno Lime Margaritas are sweet and spicy and so very very refreshing.

Virgin Grapefruit Jalapeno Lime Margaritas

  • 6 cups grapefruit juice
  • Jalapeno Lime Simple Sryup (see recipe below)
  • ice
  • raw sugar and lime zest
  • lime wedges
  • thin slices of jalapeno

In a large pitcher with lots of ice, mix the grapefruit juice and simple syrup. Rim the glasses with raw sugar and lime zest. Garnish with limes and jalapeno slices.

Jalapeno Lime Simple Syrup

  • 1 cup sugar
  • juice of 5 limes plus enough water to make 1 cup
  • zest of 5 limes
  • 1 jalapeno sliced

Bring the ingredients to a boil and boil one minute. Pour into an airtight container and chill.

I set this pretty outdoor table with beautiful dishes from Pier 1. These melamine plates are pretty enough to use inside.

Setting a colorful table outside is easy with Pier 1’s outdoor collections. I used pretty grey dinner plates, fun bubbly glasses, bright green napkins and simple napkin rings made with wooden and painted beads.  I kept the table center simple with a large lantern and some green leaves from my yard.

Chicken Mole Slow Cooker Tacos

At this house, tacos are welcome every night of the week. But, with Cinco de Mayo coming tomorrow, tacos are must!  These Chicken Mole Slow Cooker Tacos are going to be a new favorite around here. Mole can be a little tricky and time consuming to make, but this recipe really only requires all the ingredients to be blended in a food processor or blender and then just pour it over the chicken and turn on the slow cooker. Sweet and spicy, mole is a unique flavor that’s sure to be a hit this Cinco de Mayo.

Oh and how about these fun Taco Holders? Why would you ever eat a taco off an ordinary flat plate? My kids instantly thought dinner was a lot more exciting eating from these.

  • 1 medium onion roughly chopped
  • 1 can of stewed tomatoes
  • 3 cloves of garlic
  • 1/2 cup raisins
  • 3-4 chipotle peppers in adobe sauce
  • 2 tbsp. peanut butter
  • 1 tsp. cinnamon
  • 1 tsp. salt
  • 1 tsp. Mexican oregano
  • 2 tsp. chili powder
  • 1 tsp. cumin
  • 1/2 tsp. coriander
  • 50 g or 1/2 bar of dark chocolate (I used 72% Ghirardelli)
  • 6 large boneless, skinless chicken breasts
  • corn tortillas
  • cilantro, radishes, and limes to garnish

Place first 13 in a a food processor or blender, blender into smooth. Place the chicken in the bottom of a slow cooker, cover with the mole sauce. Cook on low for at least 6 hours. A Retro Style Bike and Homemade Chocolate Coconut Granola Bars

Plus biking is one of those activities that doesn’t feel like exercise when you are doing it.

We love to take our bikes when we are on vacation. Sometimes the best way to see a new place is on a bike. This slower pace allows for you to not miss fun details along the way. Really you can cover a lot of ground on a bike. and parking is never an issue.

A couple weeks ago I spent a couple days in Palm Springs with some of my blog friends. Sarah of Sarah Hearts, her husband, Kevin, and I decided the best way to take in Palm Springs’ mid century architecture and desert landscapes._red bike 9The next chapter for Columbia has been written. Back in 1877, Columbia started selling bicycles before any other company in the USA. This company knows bikes, Columbia invented the tandem bicycle, a bicycle built for two, expertly capitalizing on their engineering superiority. And now they are rolling out a brand new fleet of beautiful bikes available at Walmart, Target, Toys R Us, Amazon and Dicks. _red bike 8

This cute red bike is Columbia’s 1920’s inspired Archbar 700c Vintage City Bike, available at Target. It has a steel frame, 7-speeds, steel fenders and a retro inspired seat the hand grips. It’s a really smooth, comfortable bike to ride.

_red bike 6And if you are going to ride your bike, you are definitely going to need a snack along the way. You gotta fuel your body. These Homemade Chocolate Coconut Granola bars are jam packed with all the good stuff. They are gluten free and sweetened with just honey and dates (oh and a few semi-sweet chocolate chips). It’s kind of nice to know what you’re putting in your body. I’m not sure if I’ll even be able to eat a store bought bar again. I might have become a granola bar snob. Plus these require no baking, so they are quick and easy to make. _chocolate coconut granola bars 1Homemade Chocolate Coconut Granola Bars

  • 1 1/2 cup rolled oats
  • 1/2 cup dates, pitted
  • 1/4 cup pecans, chopped
  • 2 tbsp raw shelled hemp seeds (optional)
  • 2 tbsp flax seed (optional)
  • 1/2 cup shredded coconut
  • 1/2 cup mini chocolate chips
  • 1/4  cup honey
  • 1/4 cup peanut butter
  • pink of salt

In the bowl of an electric mixer place the rolled oats, pecans, hemp seeds, flax seed, coconut, and salt. Place the pitted dates in a food processor and blend until the dates come are one big ball. Place the peanut butter and honey in a microwave safe bowl and heat for 30 seconds or until it is a liquid.  Add the dates and honey and peanut butter mixture to the oat mixture and mix with the electric mixer until the ingredients are well combined.

Line an 8×8 inch pan with parchment paper.  Firmly pack the oat mixture into the pan.  Sprinkle with the mini chocolate chips and press firmly into the bars. Cover with plastic wrap and place in the fridge for at least 2-3 hours. Remove from the pan and cut into 10 equal sized bars.

Lemon Thyme Shortbread and Garden Rose Trays

Lemon Thyme Shortbread Recipe

I’m back with another fun idea for Mother’s Day. On Monday I shared the garden rose blankets and FREE Printable gift tags I made for my mom. Now, I’ve got to have a fun gift for the other mother in my life, my mother in law. Mom’s need a little pampering, that’s for sure. So serving them a little afternoon tea with pretty Lemon Thyme Shortbead Cookies on a floral tray seems like a great idea.

When we were in Washington DC for Spring Break, one morning we went the Rose’s Luxury’s (probably the best food I’ve ever had) new coffee shop – Pineapple and Pearls. Oh my, if you can be smitten by a coffee shop, I was. They have the yummiest sticky buns in unusual flavors like Mexican Chocolate, Pineapple and Brisket and Horseradish. I also had an adorable latte with a panda on it.  My mother in law order a Lemon Thyme Shortbread, and it was soooo yummy. So, I decided I needed recreate this cookie for a little Mother’s Day treat.

Lemon Thyme Shortbread
1 cup butter
2/3 cup powdered sugar
1 3/4 cup flour
2 tsp. freshly thyme chopped
zest of one lemon
1 tsp. vanilla
small sprigs of thyme for the tops of each cookie

Cream the butter and sugar with an electric mixer. Add the vanilla, lemon zest and thyme.  Add the flour and mix until the dough comes together.  Wrap the dough in plastic wrap and chill for at least 30 mins.

Pre-heat the oven to 350F.  Roll out the dough to a little less then 1/4″ on a well floured surface. This is a very soft dough, that’s what makes them so tender when they are done.  Keep the dough cold and work with flour on your hands and on the surface.  Cut out desired shapes and top with a sprig of thyme.  Place on parchment lined baking sheets.  Chill the cut cookies for at least 20 mins. before baking (this helps the cookies keep their shape and not spread on the cookie sheet).  Bake the cookies for about 12 mins. or until the edges are just barely brown. Cool on wire racks.

These cookies freeze well in an air tight container.

Trays are one of those home decor accessories that you just can’t have too many of. Not only are they perfect for serving food on, but they are great on dressers and bedside tables for keeping all your little things organized. I have trays on my coffee table, dining table, and beside my kitchen sink.

I took a few more of my garden rose images and had them put on sleek lucite trays with Shutterfly. Shutterfly has beautiful, waterproof, durable lucite trays that you can customize. It’s really kind of hard for my to pick a favorite. They all turned out really pretty.

Tomato Goat Cheese Tart

Before we know it, Summer will be here. I’m ready for dinners outside and having friends over for bbqs. And while the food is on the grill, I’ll be serving my guests this yummy and also very pretty savory tart. Creamy, tangy goat cheese, a little dill and sweet tomatoes make this fresh appetizer a crowd favorite.

Tomato Goat Cheese Tart

  • Pie Dough (store bought or homemade – I like Martha’s Pate Brisee)
  • 4 oz. Goat Cheese
  • 1/2 tsp. dried and fresh dill
  • zest and juice of one lemon
  • 3 tomatoes (pretty heirloom tomatoes in a few colors)
  • salt and pepper

Roll out the pie crust to a long oval shape.  With an electric mixer, beat the goat cheese, lemon zest, a tablespoon of lemon juice, and salt and pepper until smooth.  Spread the goat cheese even over the pie crust.  Bake for 12-15 minutes at 450 F until the crust in golden. Allow to cool completely.

Thinly slice the tomatoes.  Layer the tomatoes in rows and top with a bit more lemon zest, dill, salt, and pepper.

Cut into 2 inch pieces. Serves 6.

Frozen Lemon Mint Sweet Tea

Our days are getting warmer and I’m dreaming up cool summery treats.  Today’s recipe is a sweet tea at it’s best.  Fresh mint, lemonade and iced tea make up this yummy frozen treat. Is there anything more refreshing then iced tea?  Why yes there is, frozen iced tea!frozen sweet tea with mint and lemon_frozen iced tea 5Natalie’s Orchid Island Juice Co.has come out with a brand new product, Lemonade Tea. There’s no hidden ingredients in this drink, it has just 4 ingredients – water, tea, lemons, and pure cane sugar.frozen iced tea

This simple recipe is a very similar process to making as my Grapefruit Mint Sorbet (which is a family favorite around here).

Frozen Lemon Mint Sweet Tea
  • 4 cups of lemonade tea (2 16 oz. bottles of Natalie’s Orchid Lemonade Tea)
  • 1 cup of sugar
  • 1 cup of water
  • 3 tbsp. coarsely chopped mint
  • lemon slices and frest mint for garnish
Start by making the mint simple syrup. Bring to a boil the water, sugar and mint. Boil for just one minute.  Allow the syrup to cool completely. Pour through a strainer to remove the mint leaves. In a large bowl combine the syrup with the lemonade tea. Chill in the fridge for at least 1 hour.
Following the instructions of your ice cream maker, freeze the sorbet. I have a Cuisinart Freezer and it took about 20-25 mins to freeze completely.  Transfer to an air tight container and freeze in the freezer for a couple more hours before serving.
This recipes makes about 6 generous servings.  Garnish with a couple fresh mint leaves and a slice of lemon.

Knott’s Berry Farm Boysenberry Festival

Last week we made a quick trip south to Knott’s Berry Farm. I haven’t been there since I was a kid. From now until April 3rd the Boysenberry Festival is on! So if you are in Soun, this would be a great place to spend the day. There’s special live entertainment and Boysenberry flavored EVERYTHING!  We spent a fun filled day enjoying rides and tasting all the Boysenberry Bites. Knott’s Berry Farm knows how to food you guys.

Knott’s is great, it’s a low key, not overly crowed amusement park.  And there was big, fast rides for my older two and lot’s of fun little kid rides from Olivia.

This is Southern California at it’s best! The days are warm and sunny and the evenings are cool. I had a lot of fun just taking pictures of all the beautiful flowers that were in bloom around the park. I enjoyed capturing all the pinks and purples everywhere.

Buffalo Chicken and Blue Cheese Hand Pies

This fun recipe is a combination of two of my favorite comfort foods, buffalo chicken wings and pie, all packaged up into a neat little hand pie. These are really quick and easy to make.  Spicy buffalo chicken is mellowed with cream cheese and blue cheese. Served with carrots, celery and blue cheese dressing, this is perfect for a party appetizer or just serve as dinner. My kids are always happy to have any chance to eat with their hands.  And my husband is excited to have a few of these for easy to pack lunches.

You can have these made in about 30 mins.  I’ve got a couple shortcuts to help you out.  I’m usually a snob about pie crust, but I totally cheated and bought pre-made, store bought pastry, and my family didn’t even know. Also, let your grocery store roast the chicken for you, rotisserie chickens are the handiest thing to buy and they are delicious!

Buffalo Chicken and Blue Cheese Hand Pies

  • 1 rotisserie chicken
  • 4 oz. cream cheese
  • 1/2 cup Sweet Baby Ray’s Buffalo Wing Sauce
  • 8 oz. package of blue cheese crumbles
  • 1 package of prepared pie crust (found the refrigerator section)
  • 1 egg
  • 1 tbsp water
  • carrots, celery, and blue cheese salad dressing to garnish

Start by rolling out the pie crust (some already comes rolled out even). Using a bowl out cup as a guide, cut out 5 inch. diameter circles.

Remove the chicken from the bones and skin and shred the meat.  Add the Buffalo Wing sauce to the chicken and toss to coat evenly.

Beat the egg and water with a fork to make an egg wash.

Brush around the edge of each circle of pastry with the egg wash.  Spread about 1 tsp. of cream cheese, then a small scoop of the chicken and finally a generous sprinkling of the blue cheese on each circle.  Place in the center and off to one side slightly.

Fold the pastry in half and gently press the sides together.

Using the prongs of a fork, press along the edge of the now half circle hand pie to seal the edges completely.

Prick the center of each hand pie a couple times with the fork to create a vent.

Transfer to parchment lined baking sheet and bake at 400 F oven for about 20 mins, or until they are golden brown. Serve warm with carrot sticks, celery and blue cheese salad dressing.

Easy Peanut Butter Popcorn

Well, every time I go on vacation, I think I’ll be able to keep up with posting, and every time I fail. I had 4 posts ready to go for last week and they never happened. We just don’t do vacation to relax, we love to pack it in and see as much as possible. So, when we finally made it back to the hotel each night, I just couldn’t stay awake. Thanks for sticking in there with me, even when I flake. But, this week with my family was important and the blog needed to wait while I made memories with my kiddos.

Kiwi Mojitos

It’s been a while since a shared a mocktail recipe with you. I’m on a mission to create some fun drinks the whole family can enjoy. With St. Patrick’s Day right around the corner, I needed to come up with a fun green drink. With this drink in hand on March 17th, you’ll definitely be pinch proof.

Kiwis are such a unique fruit. They are tart and sweet and paired with mint to make a super refreshing drink. I love the speckles of black seeds in this pretty drink.

Kiwi Mojitos

4 kiwis
2-3 limes
1/2 cup sugar
fresh mint leaves
club soda
crushed ice

Start by making the kiwi puree.  In a blender, place 3 1/2 kiwis peeled and halved, the sugar, lime juice and about 2 tbsp. fresh mint leaves. Blend on high until it is a smooth puree.  If it is too thick add a little more lime juice.

Fill glasses with ice.  Pour about 1/3 cup puree over the ice and then top off the glass with club soda. Give it a stir and then garnish with a slice from the half a kiwi that is left and a sprig of mint leaves. And if you are looking for a grown up version, no one is going to stop you from adding a little rum.

Puree can be made ahead and stored in the fridge up to 24 hours. Makes 6 generous drinks.
